Orange and Avocado Salad
Ingredients
4 oranges
2 grapefruits
4 avocados, peeled, seeded and halved
8 lettuce leaves
Sweet onion dressing
Directions
1. Peel oranges and grapefruit and cut into sections
2. Peel avocados cut in half and remove the seed
3. Place the oranges and grapefruit sections into each half of the avocado.
4. Place each half of avocado onto a lettuce leaf and top with sweet onion dressing. Serve and enjoy!!
Spinach Salad
Ingredients:
6 cups of fresh spinach, torn
1 can of mushrooms, drained
1/2 cup of shallots, chopped
1 pinch of black pepper
3 slices of bacon
1/2 cup of vinegar
1 tablespoon of sugar
1/2 teaspoon of dry mustard
1 boiled egg, chopped
Directions
1. Combine spinach, mushrooms and onions in a large salad bowl. Sprinkle with black pepper.
2. Cook bacon crisp. Drain bacon on paper towel. Crumble bacon.
3. Mix vinegar, dry mustard and sugar well. Pour over the salad and toss well. Top with bacon crumbs and chopped egg. Serve and enjoy!!
Zucchini Salad
Ingredients
4 cups of zucchini, sliced
1 cup vinegar
1 cup olive oil
2 tablespoons of sugar
1 clove garlic, minced
1 1/2 teaspoon of dried basil
1/2 teaspoon of salt
1/2 teaspoon of black pepper
Lettuce leaves
1/2 cup of shallots, sliced
1 tomato, diced
Directions
1. Cook zucchini in salted water until telder.
2. On a platter, place half of the zucchini in a layer
3. Mix vinegar, oil, sugar, garlic, basil, salt, and pepper until well blended.
Green Bean-Pimento Salad
Ingredients
2 cans of cut green beans, drained
1/2 cup of olive oil
2 ounces of sliced pimentos, drained
1 tablespoon of vinegar
2 tablespoons of lemon juice
1/2 cup of onion, chopped
1 tablespoon of dried parsley
2 teaspoons of sugar
1/2 teaspoon of salt
1/2 teaspoon of black pepper
Directions
1. Mix all ingredients together in a jar except for the beans, and shake well.
2. Place the breen beans in a salad bowl and pour the dressing over them and toss well. Serve on a lettuce leaf and enjoy!
Cauliflower Salad
Ingredients
1 cauliflower
2 cartons of avocado dip, 6 oz
1/2 cup of monterey jack cheese
1/2 cup of cheddar cheese
6 raddish
Directions
1. Cook the whole cauliflower in salted water for about 25 minutes.
2. Drain well and cool completely.
3. Remove the leaves and core from the cauliflower.
4. Place the cauliflower on a platter.
5. Spread the avocado dip over the entire cauliflower.
6. Mix the cheeses and sprinkle over the dip.
7. Garnish the platter with sliced radish. Serve and enjoy!!
